This might be a little out there, but bare with me.
I always struggled with the gender dichotomy in Wicca (god - goddess, male - female), so, why not have a course about mixing Wicca with post-modern feminist theory? You could include authors like Diane Sylvan, who writes about feminist, body-positive paganism.
Greek pantheon and mythology
Astrology
Kitchen witchery/Pagan cooking (expanded beyond the class already offered, with herbology integrated in)
Salem Witch Trials
Spells for the First Degree
I would love to help in the writing of these classes also. I took classes in college about greek mythology and the Salem Witch Trials, so I have fairly extensive knowledge in those areas. I also have been studying astrology for a little over 20 years, and I started cooking at a very young age so I have knowledge in that area as well.
I would love to take a course on spirt communications Raymond Buckland wrote a very good book on it with lesson exams and everything i would just like a course based on the book i guess im doing work in the book on my own but it would be great to have a mentor on that one lol
