Beltane (NH) and Samhain (SH) will be upon us in a few short weeks. Here in the northern hemisphere it is a time of fertility and renewal, vivid colours of flowers and life coming forth. It is also a time for, if your lucky enough weather-wise, to be outdoors for this festival. And, as with any festival, it is time for delicious foods! So please post some of your yummy recipes and gathering ideas. Do you plan a large potluck meal? Or a simple feast with your family and friends?

Personally, I need some starter ideas. For Sabbats, I like to do something a little different, so I would appreciate any ideas you have!

Mint Baby Potatoes

Baby potatoes should be showing up soon in your local produce stores. Dried mint will work, but if you can get fresh mint it will be even better. The following recipe doesn’t have exact measurements because you may have more or less people at your gathering, but try to average 4-5 baby potatoes per person. If there are leftovers, no problem, just cut them up smaller and pan-fry them in a couple of tablespoons of oil for your breakfast the next day.

You will need:

*An average of 4-5 baby potatoes per person

*2 bundles (about half a handful each) of fresh mint, chop both piles. One is used in the boiling water, the other to be added to the butter afterwards
**if using dried mint, use 1 tablespoon in the boiling water, and 1 tablespoon added to the butter or oil.

*Butter or oil to coat the potatoes. Personally I use olive oil and just enough to coat the boiled potatoes.

*Salt

*Pepper

Directions:
In a large pot bring water to a boil, once at boiling add a dash of salt into the water. Add your baby potatoes, and one of the bundles of chopped mint.

Use a fork to test for doneness. Drain the potatoes, put back into the empty, hot pot. Add your oil or butter, bundle of chopped mint, pinch of salt and black pepper. Toss together to evenly coat the potatoes. Serve in a warm dish. So good!
