Lammas is coming up! Well, since it's also called "Loaf-Mass" by the Catholics, I suppose I'll be making a lot of bread with herbs and berries. Scott Cunningham says it's also traditional to drink cider instead of wine. That's fine, but how can I spike the cider? (lol)

Here's a cornbread recipe that I threw together the other night:

1 1/4 cup all-purpose flour
3/4 cup corn meal
1/4 cup sugar (white, granulated)
2tsp baking powder
1/2tsp salt (really just a pinch or two)
1 cup skim milk (or even soured milk!)
1/4 cup olive oil
1 egg
2tbsp fresh chopped rosemary

Heat oven to 400F. Grease a loaf pan. Combine all dry ingredients, then stir in wet ingredients and herbs. Mix until just combined. Pour into loaf pan. Bake 25-30 mins, or until it turns a light golden brown, and a toothpick inserted in the center comes out clean.
I make a regular white bread dough in my bread machine then make the breads into different shapes. For example to make a large flower, separate the dough into six equal pieces to make buns, one for the center the other five around the center represent petals with a filling of egg salad. Perfect for Ostara. For Lammas, I will probably make it into the shape of a sun or a whatever takes my fancy at the time.
I love breads. Adding grains, seeds, dried fruits, spices or herbs then creating different shapes can make plain doughs into wonderful and unique breads.
I know this is a little late but...

MEXICAN CORNBREAD CASSEROLE
Cornbread Batter:
2 cups self rising cornmeal
1 can (10 oz) cream style corn
2 eggs well beaten
1/2 cup crisco oil
2 tsp sugar (if desired)
1 cup milk (may add more milk to make batter right)
(not to thick or not to thin)about like cake batter
Filling:
1 1/2 lbs lean ground beef
1 large onion chopped
3 to 5 small banana peppers chopped
2 to 3 cups grated cheddar cheese (mild or med)
Mix together corn meal, eggs, milk, sugar, cream style corn and oil. set aside. This is your batter for the bread. In a large skillet, cook ground beef, onion and peppers until browned and then pour into strainer. Drain off any grease. Rinse with hot water and let drain.
Pour half of batter into large greased skillet. then pour all of the hamburger mixture over this. Top this with all the cheese.
Next, pour the other half of your cornbread batter over the meat and cheese filling.
Bake in a 350* oven for about 45 to 50 min. or until brown. Let set a few minutes before cuting and serving.
This makes a wonderful main dish. Serve with soup beans and enjoy.


Red Lobster's Cheddar Biscuits

Ingredients:
2 ½ cups Bisquick baking mix
¾ cup cold whole milk
4 tablespoons cold butter (1/2 stick)
¼ teaspoon garlic powder
1 heaping cup grated cheddar cheese

Bush on Top:
2 tablespoons butter, melted
¼ teaspoon dried parsley flakes
½ teaspoon garlic powder
pinch salt

Directions:
1. Preheat your oven to 400 degrees.
2. Combine Bisquick with cold butter in a medium bowl using a pastry cutter or a large fork. You don't want to mix too thoroughly. There should be small chunks of butter in there that are about the size of peas. Add cheddar cheese, milk, and ¼ teaspoon garlic. Mix by hand until combined, but don't over mix.
3. Drop approximately ¼-cup portions of the dough onto an ungreased cookie sheet using an ice cream scoop.
4. Bake for 15 to 17 minutes or until the tops of the biscuits begin to turn light brown.
5. When you take the biscuits out of the oven, melt 2 tablespoons butter is a small bowl in your microwave. Stir in ½ teaspoon garlic powder and the dried parsley flakes. Use a brush to spread this garlic butter over the tops of all the biscuits. Use up all of the butter. Makes one dozen biscuits.
