Lammas

Usually celebrated August 1 - 2 Lammas falls at the beginning of the harvest season. For more information on the Sabbats be sure to check through the Witch School Courses. They have an excellent selection of courses.

Grains, apples and other fruits and vegetables are coming into season and it is the perfect time to celebrate these foods. One food I particularly love at this time of year is honey! You can do so much with honey....baking, cosmetics, health-care and cooking.

A great thing to do at this time of year is go to a bee farm. Ask if you can have a tour, explore the gift shop, taste all the different flavours of honey that are available and if you are lucky enough try some honey mead!

Here is a recipe my daughter and I make together. It is spiced or flavoured honeys, which is great in your tea, on toast or in a cup of hot water or even just a spoonful of it by itself. By incorporating different dried herbs and spices you can make flavoured honeys to combat sore throats, colds, coughs and various other ailments. Ours is just for tea and toast...

Spiced Honey
For 1 cup of honey

1 cup mild flavoured honey
1/2 tsp of powered cinnamon
1/4 tsp of powered ginger, nutmeg,
1/8 tsp of cloves and allspice (I find cloves and allspice are really strong, so I only use a little amount of them)

In a sterilized jar add all your ingredients, stir really well. Let sit for at least a week, stir everyday to blend flavours. It is delicious on toast or stirred into a cup of regular tea. Very yummy! Play around with your spices and herbs. Try making some for sore throats, coughs ... whatever strikes your fancy!

I love using spiced/ flavored honey. It is an antibacterial so when cold and flu season hits, I add a teaspoon of honey into hot lemon tea or mint tea. This year I am trying out a mint infused honey so we will see how that one will work! I haven't tried it with fresh herbs but I would think they contain to much moisture.
Sounds wonderful ! I will definitely give this one a try this year.
Oooh, that sounds really good! Normally for the harvest sabbats I make a sweet corn bread and I normally use honey butter as a spread. This year for the next two sabbats I'm totally going to try some of this! Thanks for the recipe!
MM Karnai,

I am looking for a good cornbread recipe. Could you post your recipe? I would love to try it!
