Quick and Easy Pizza
Ingredients:
Tortilla Shells
Pizza Sauce
Toppings
Cheese
Preheat oven to 400
Take your tortilla shell and put your pizza sauce on the shell (I like sprinkling fennel seed on my sauce it gives it a nice flavor. After the sauce is on start with your toppings and cover with cheese (I put a little sharp cheddar on top of the mozzarella cheese.

NOTE: if you have tons of toppings like I end up with you need to cook your pizza for about 15 or so min. If you just top with pepperoni and cheese check it about 10 min (it takes less time to cook these)

Kids love these as they are made personally for each person.

Sounds good, and sounds a lot less fattening than pizza crust pizzas! Thanks for the recipe. BTW, do you bake it on a cookie sheet, or straight on the rack?
I bake mine on a pizza stone. I had a book party one time for a lady who sold pampered chef and I got a free round baking stone. OH its fantastic. If you don't have one its a must have. I actually picked another one up at a yard sale for 1.00 the lady told me it made her cookies too done she used it once and I would have to agree with her I don't bake cookies on them. I think they do get too done or it could have been the oven.

The tortilla shells have came along way. You can get green ones, no fat ones, wheat ones and most likely more the choices seem to be endless. If you like thin crust you will love these. I have been making grill cheeses with them for years. Make them just like the sandwich.

We love cooking with tortilla shells too. For a quick after school snack I shred cheese, thin carrot slices (very thin, almost transparent), kernel corn, pepper slices, basically whatever is handy, (just be sure to slice them thinly) and make quick quesadillas. Using medium heat, place one shell in a heated frying pan. Quickly add your toppings, a few herbs like oregano, thyme, or basil, maybe some paprika or cayenne seasoning to one side of the tortilla. Gently fold over the other side. Very carefully flip the quesadilla so both sides get very light golden brown. It should take a mere minute or two. Slid it on to a cutting board and slice into thirds. My kids LOVE this snack. So do I for a quick lunch!
